Hey mate...
(A) By adding a very small amount of baking soda to fresh milk, the milkman keeps the milk unspoiled for little more time than usual time. As PH level increases the milk turns slightly Alkaline.
(B) As baking soda is added, it turned into a base. But curds need acidic medium to set. Hence this milk takes a long time to set as a curd.

(a) he did it to keep milk fresh for long time to not be change into curd. ( b) because baking soda provides a basic medium to milk container and milk will not turn into curd as it will change into curd only when it will get acidic atmosphere.
