Fats are largely digested in small intestine.

EMULSIFICATION:

Bile salts of bile break down fat droplets into smaller ones by reducing the surface tension of the droplets.

Lipase acts on fat (triglycerides) to produce a fatty acid and a monoglyceride.

Triglycerides------>diglyceride + fatty acid

(Lipase)

Similarly, Monoglyceride forms fatty acid and glycerol.

ABSORPTION:

They enter lacteal and absorbed by lacteal as they are bigger to be accommodated by the capillaries..It is also since lacteal have blind openings.Fatty acids and glycerol are Incorporated as structures called micelles. From the micelles fatty acid and glycerol and other fat soluble substances are absorbed by the intestinal cells. These cells resynthesize the products in their ER and golgi apparatus and convert them into smaller fat molecules called chylomicrons.These chylomicrons then enter the lacteal. This lacteal ultimately release these substances into the bloodstream.
