It is a high point that, if water falls on it then it could go either way. One good example is a peaked roof with the peak facing north and south. Water that falls on the west side of the peak will flow west and on the east side of the peak it will flow east. Here are a couple of geographic examples. The continental divide in North America is roughly the Rocky Mountains. Rain falling east of the Rockies will flow to the Atlantic, and that falling on the west side will flow to the Pacific. And another divide would divide water that would make it to the Mississippi River vs. water that would flow directly to the Atlantic.
Another “water divide” would be when Moses lifted his arms and parted the Red Sea, but I suspect that is not what you really meant
