HOW TO MAKE 'ALOO KA BHARTA' (MASHED POTATOES)

INGREDIENTS:
4-5 medium sized potatoes 1 small onion (chopped)
1 tsp cummin powder
1-2 tsp oil
12 green chillies (chopped)
Asmall bunch of fresh coriander leaves (chopped)
• 1 tsp salt
METHOD:
Boil the potatoes till they become soft. Mash with a potato
masher or fork
Mix in all the other ingredients except the oil
, then add enough

• Serve at room temperature with 'khichdi' or use it for stuffing
paranthas.

PREPARATION
1 In a bowl add blended tomatoes, eggplant, potatoes, ginger, garlic and keep it aside.
2 In a heated pan add oil, dry red chillies, curry leaves, mustard seeds, cumin seeds.
3 Add chopped garlic, onions and mix it well.
4 In another heated pan the vegetables paste and let it cook.
5 Add red chilli powder along with the spices and mix.
6 Add tamarind juice, whole green chillies into the vegetable paste.
7 Add all the cooked spices in the paste, cover the pan with a lid and let it cook.
8 For garnish add chopped fresh coriander leaves and Aloo Bharta is ready to serve.
