There are a number of tests that can be performed to confirm presence of protein in a food item.
Test 1 (HEAT TEST):
- Take small amount of sample and make an aqueous solution in a test tube.
- Heat the upper part of the test tube. The lower part acts as control.
- The upper part shows cloudy turbidity. Hence protein is present.
BIURET TEST:
- Take the sample solution and mix BIURET REAGENT to the test tube.
- Appearance of purple colour of solution indicates and confirms presence of proteins.
- Blue colour of solution indicates absence of proteins.
