the simple difference b/t both is that covalent compound is formed by non metals

We add (.H2O) because of water presence in them. Water is found in the crystalline framework of their other main compounds. That's why we present it with the dot thing. They can also form a complex structure. We can't figure out by observation that what molecules of H2O would be needed for any reaction. We get that value by experiments.
