Some of the crystals of anhydrous copper sulfate are dissolved in water the resultant colour of the solution is blue or some times sky blue. The solution turns acidic.

on adding zinc to CuSO4 solution, zinc displaces copper from copper sulphate & forms zinc sulphate solution because zinc is more reactive metal which displaces less reactive metal from its solution.

This is indicated by a colour change from blue to colourless. 

CuSO4 solution has a blue colour while ZnSO4 solution is colourless.

Zn+CuSO4→ZnSO4+Cu
