There are few conditions that led to the browning in apples.
- It can happen if we cut the apple with a rusted knife and store the pieces in a copper bowl. This will enhance the browning.
- Fruits contain an enzyme known as polyphenol oxidase. When this enzyme comes in contact with oxygen it reacts and turns the apple brown. Also if we increase the pH level of the surface it will cause the browning faster.
