Answer:

Architecture: especially in older cities. I think the archetecture really tells the story of the city, when it was built, why it was built, when it went through a lot of growth, did it all stack up on top of itself in a tiny port like New York or Hong Kong, did it spread out along a river like London, was it a defensive military point like Edinborough or a growing trading port like Shanghai.

Food: Another of my favorite expressions of a city are its food, not just the nice restoraunts but the street food, breakfast, and bar fare. More than just whats being served, but also how is it being served. Am I in america and everyone gets there own enormous order, am I in Spain shareing assorted small plate Tapas with all my friends, Am i sitting with no shoes on mats in Japan, What is the atmosphere. So much of culture is experianced through dining as a way people got together that i think the experiance is super important.

Drinking/Nightlife: Ok dont go spend your vacation in a bar, but at least look up a local club and get a feel for the city at night. So many cities have a diffrent dynamic when the sun goes down and parts of the parts of the city that were dead all day come alive. Youth culture in a lot of places centers around nightlife and if you are going to get a feel for how the city developed through archetecture and food dont miss the oppertunity to see where the city is headed by engaging in some after dark entertainment. Same as the food, its about the experiance not necessarilty the drink. Are you in a rehabed industrial building in Berlin with a DJ, Are you in a basement bar in Prague with a thin hanging smoke, are you outdoors in Pattya with a live band, maybe dancing in an ally in Bucharest.

Take a Tour: They will be tourist heavy but if you came to see the castle or the cathedral or the gardens or whatever take the tour, sometimes theres nothing like just showing up and letting the tourguide worry about what youre doing for the next few hours. I always do at least 1 normally 2 or 3 and your tourguide probably has some more good reccomendations of places you might be interested in.
