Rancidity is a very general term and in its most general meaning, it refers to the spoilage of food in such a way that it becomes undesirable for consumption. Food turns rancid when the fats and oils within them get oxidized and the taste and smell of the food changes due to this reason.

Answer:

Rancidity is a condition in which the substance with oil and fats get oxidized when they are exposed to air. A substance is said to be rancid when there is a change in smell, taste, and colour. An example of rancidity is when a chips pack is exposed to atmospheric air which results in a change in taste and odor.

The general name of the chemicals which are added to fat and oil containing foods to prevent the development of rancidity is "Anti-oxidants".
