Answer:

a) Papads are fried in oil before being served, if they are kept open in contact with air then i tends to Oxidise with the oil resulting in Softerning and Moist nature of papad. This phenominan is caled Rancidity.

b) Few plants reqire special climating conditions for thire growth hence are only peoduced at a particular season, but are produced at surplus amount to catch up the demand for the rest of the year.
