(i) While preparing Tea .. The changes in water are as follows:

1. The water inside the kettle slightly becomes warm and boils ...

This happens because the water reaches its boiling temperature that is 100°C and the vapour pressure of the water becomes equal to the atmospheric pressure exterted on the water.

(ii) The changes in milk while boiling are as follows :

1.The milk inside the saucepan slightly becomes warm and boils ..... and slightly rises..

The observed changes in milk are: release of H2S production, of cooked flavour, development of anti-oxygenic properties and lowering of curd tension. All these changes are related to whey proteins. But one should be careful while boiling milk beacuse if the milk overboils it may burst and the nutrition quantity in it will become extinct..
