Step 1 - The first step in making rasgulla is to making chenna i.e. curdling milk and separating the cheese from the whey. This is done by mixing lime juice in boiling milk.

(This is a chemical change as new substances are made out of reaction between lime juice and milk.)

Step 2 - The chenna is made into balls.

(This is a physical change as the shape of chenna is changed. All other properties of chenna remains same.)

Step 3 – Sugar Syrup is made by mixing sugar in water and boiling the mixture.

(This is a physical change as the sugar molecules break in to finer pieces and mix in between water molecules. There is no new substance formation in this, and if we evaporate water, we are left with sugar crystals.)

Step 4 – The chenna balls are cooked in sugar syrup, till the balls increase in size and become spongy.

(There is physical change occurring at this step. The chenna balls change its property can becomes hard. The change is irreversible, but no new substance formed, so it is a physical change. Also, the sugar syrup that goes inside the chenna balls can be squeezed out and separated back, so this again is a physical change.)
