because the starch of the food is converted into sugar molecules or glucose with the partial digestion done by saliva

When chapati is chewed for some time it taste sweeter because, as you know chapati is carbohydrates and it presents starch. When salivary gland secrets saliva, then it breaks carbohydrates into simple glucose that is hexose. It is generally food in our body by hydrolysis of starch.
