When sugar (glucose) is heated , blacked carbon (charred) and water is produced.
- When only sugar is said, it can be assumed that the question is mentioning about glucose.
- Now, glucose is a optically active monosaccharide which contains poly-hydroxy aldehydes groups.
- Now, if you try to analyse its elementary components, it contains carbon, hydrogen and oxygen in ratio of 2:1.
- Thats why , whenever glucose is heated, water is evaporated and the black, charred carbon is left behind.

- If complex sugars like sucrose is provided then upon heating sucrose will break down to give glucose and fructose.
- Lactose when heated will break down to give glucose and galactose.
