When sugar (glucose) is heated , blacked carbon (charred) and water is produced.

  • When only sugar is said, it can be assumed that the question is mentioning about glucose.

  • Now, glucose is a optically active monosaccharide which contains poly-hydroxy aldehydes groups.

  • Now, if you try to analyse its elementary components, it contains carbon, hydrogen and oxygen in ratio of 2:1.

  • Thats why , whenever glucose is heated, water is evaporated and the black, charred carbon is left behind.
