The expression  '................. is/was in his blood' means that an individual has a lot of experience of it. Here, 'Rice was in his blood' indicates that Subbaiah had a family history of dealing in rice. He had learnt all about rice from his father. His father was a rice merchant and even as a child, Subbaiah used to help out his father in the shop. He enjoyed it and grew to love it all.

Later, when his father passed away, Subbaiah took charge of the shop. His business did well and so, all he could think of was rice. His life revolved around rice- buying and selling, though at very high rates.

Therefore, the expression has been used to show that Subbaiah grew up dealing in rice and continued to do that even as an adult.
