The handle needs to be made of something that does not conduct heat very well .A metal handle would become red - hot . Pressure cooker handles are made up bakelite; a thermosetting plastic. Bakelite is used because it has heat - resistant properties and is an electric insulator.

Plastic is insulator of heat. Thus while cooking when the cooker gets extremely heated, handles are comparatively cooler to hold . Metals are a good conductor of heat. If the handles are also happened to be made up of metal it also becomes as hot as the body and we cannot hold it.

it is because plastic is not good conductor of heat. so incase where are touching handle of pressure cooker our hands does not burn because handles of pressure cooker are made up of plastic which does not allow heat to pass through it.
