the alkaline milk takes a longer time to set as a curd because the lactic acid formed has to first neutralise the alkali present in the milk.. Hope it will helps you

Becoz baking soda is a base which reacts with acids and neutralizes it. This prevents milk from getting sour and keeping it fresh for long time....
