  • This is due to inactive amylase present in stomach which don't react on starch due to low pH in stomach and the indigestible dextrin resists digestion which is produced by the hydrolysis of starch or glycogen but maltose is a sugar that exists in wheat.
  • starch is partially transformed into maltose by the pancreatic or salivary enzymes called amylases.
