Oxidation is the chemical reaction behind the bad smell of potatoes.

  • Potato chips are made by frying potatoes.
  • It is a snack containing both fat and oil.
  • When the fat and oil are exposed to oxygen, light, and temperature it undergoes oxidation.
  • This process is known as rancidity.
  • When potato chips are rancid, they will develop a bad smell and taste.
  • It will be no longer edible.
  • The packets of potato chips are filled with nitrogen which checks rancidity.
  • Once the packet is opened, nitrogen gas escapes into the atmosphere and it is no more protected against rancidity.
