Well electricity is really just due to a flow of electrons in a material. So to be a good conductor, a material needs to allow electrons to move freely.
Metals have lots of 'free' electrons (very loosely bound electrons), and so metals can support a large current, without needing a high voltage to move the electrons.
Wood does not contain free electrons in its valence region so it can't pass the charge i.e. electricity and hence is a bad conductor.
