1.Rahul's mother cut the vegetables into small pieces and put them into the sun (to get sunlight) for few hours so that they lose water by diffusion and evaporation and become dry. She mixed common salt to the cut vegetables so that the cells of cut vegetables lose further water by exosmosis. Heating was done to evaporate the water. This is done to check the growth of microorgnisms such as bacteria and fungi on the vegetables.

2.Kidney beans are seed and each cell of it is covered with porous cell wall and semipermeable plasma membrane. By the process of endosmosis, water is diffussed in kidney beans upon soaking overnight end they get swollen and become palatable after cooking.

3.A phenomenon called endosmosis takes place when raisins are placed in water for few hours. When raisins are soaked in water, they swell. All this is due to the process of osmosis. The water molecules pass the cell membrane of the raisins and the raisins thus get swollen.Soaking the raisins and consuming them every day is a healthier alternative as opposed to eating them raw. The vitamins and minerals present on the outer skin of the raisin get dissolved in the water. Thus the amount of nutrients that will be absorbed by the body increases.

The purpose of putting the chopped vegetables in sunlight while making pickles is to evaporate the water completely and make it dry so that any microbial growth doesn’t occur due to the presence of moisture. Salt is added in large amounts to preserve the pickle so that whenever microbes try to grow, a high concentration of salt results in the exosmosis of microbial cells.  

2. The phenomenon is called endosmosis, which occurs when the concentration of water/solvent is more in the surrounding. This is the reason why kidney beans got swollen after soaking overnight in the water.
