The formation of curd happens due to chemical reaction done by a specific bacteria . In winter, the atmosphere is cool so this results in delay in the chemical reaction of that bacteria and hence the curd formation occurs slowly.
In summer, the atmosphere is warm and this helps the bacteria to speed up the chemical reaction. Thus in summer due to warm atmosphere, curd formation takes less time as compared in winter.
