Explanation:

Milk has the presence of lactic acid, due to which it is acidic and turn into curd very easily.

When, the baking soda, a basic salt is added to the fresh milk, it makes the medium of the milk alkaline, due to which it will not turn into curd easily. The acid will have to first make the medium a bit acidic so that it could be turned into curd.

pH or power of hydrogen determines if the solution is acidic, neutral or alkaline.

The pH scale helps in doing so. It has numbers from 1 to 14.

If the pH of a solution is less than 7, it is acidic.

If it is 7 or around it, the solution is neutral and if it is 7 to 14, the solution is alkaline.
