Enzymes like trypsin, pepsin etc can act on proteins of the tissue lining the digestive tract if food is not available for digestion. Hence they are produced in inactive form and are activated when food enters the alimentary canal. Salivary amylase is not found in inactive form since it breaks starch. Starch is not a component of tissues.

The inactive form of pepsin is known as pepsinogen. It requires cleavage of some amino acid residues before it forms active pepsin.This enzyme secretes in the Stomach in inactive form. This is because this enzyme requires acidic medium to be active. To make the medium acidic so that Pepsinogen enzyme gets activated.Exposure of active site allow the enzyme to become active and function to catalyze reactions. The reason for cells to secrete inactive enzymes is to prevent unwanted destruction of cellular proteins. It is only when the conditions are right that zymogens become activated into enzymes.
