Amylase, as well as being found in pancreatic fluid, is also found in saliva, therefore when you are chewing the bread, the amylase in saliva interacts with the starch in the bread, breaking it down to produce simple sugars - these simple sugars hence make the bread taste sweet.

Piece of bread is generally composed of starch molecules. After chewing it for long time, the enzymes in the mouth start attack the starch molecules which is further converted into glucose. It is the glucose which provides sweet taste. Thus, due to the action of enzymes the starch chains are converted into glucose.
