Assertion is true but Reason is false.
But why?
- First of all, we know that our mothers/chefs add a small amount of curd to warm milk to produce curd. The small amount of curd added as an inoculum contains Lactobacillus. Lactobacillus produces lactic acid which makes the pH low and helps in production of curd.
- Now, if baking soda is added to the fresh milk, it will take longer time to produce curd because baking soda NaHCO_(3) is a base. It will increase the pH of milk and prevent curd formation.
