Which chemical compound or substance without water or absence of water content is called anhydrous substance. As well as anhydrous substance will be solid compounds. If we take a example of anhydrous compound zinc sulphate - ZnSO4, and hydrated zinc sulphate - ZnSO4.6H2O . This is the difference. Where molecular weight of compound also will be increased with the addition of water molecules. And analysis already affected by anhydrous and hydrated compounds.

Anhydrous means the molecule doesn't have any water molecule attached to it.
Example
CuSO4.5H2O is named copper sulphate pentahydrate due to the presence of 5 water molecules and due to which the colour of the molecule is blue.
If you heat it,the 5 water molecules will be removed and the molecule thus will be called anhydrous copper sulphate.
As a result,the molecule is no longer blue in colour. Thus presence of water molecules also play a major role in the colour of a molecule.
