- Steaming is the process of cooking food with the help of water, whereas frying is the process of cooking food using oil.
- Steaming is a more environment-friendly way of cooking food since all that goes into the atmosphere are water vapours. However, when oil gets heated in the process of cooking, it realises carbon compounds like CO₂. This makes it harmful to the environment.
- Frying leads to shrinkage in the size of the item being fried since it draws water from inside the food. On the other hand, food that is being steamed usually swells as the cells absorb water.
- Steaming does not modify the calorific content of the food being cooked, since the only additive is water. On the other hand, frying increases the calorific content of the food being cooked since the oil that is used for frying has fat in it.
- Steaming removes fat from the meat since it easily melts but does not mix well with water (immiscible). On the other hand, frying does nothing of that sort since the melted fat easily mixes with the oil as they are both miscible.
