Answer: Trim any bits of old roots back as close to the bulb as possible, using a pair of scissors. Cut any remaining green portion off the onion, leaving only the small bulb.

Place the onions in a clear glass or jar with the root end down. Add just enough water to the bottom of the container to cover the roots at the bottom of the bulbs. Change the water at least every other day.Place the glass in a window that receives plenty of filtered sunlight throughout the day. You should notice new root growth within a few days and the green stalk will also begin growing. After the roots reach at least 1 inch long, you can transplant the onions to well-drained potting mix and trim back the green stalk as needed for making salads and other dishes.
