The primary reason, I suspect, is marriage. Some interfaith marriage works fine with the partners each keeping their own faith. Some, probably do not, and one (or both) partners change.
Next, I think, would be giving up religion. Education tends to interfere with religious certainty, and some people find they no longer are interested in, or believe in the religion they were raised in. Or any other.
Next, I would guess, are those seeking a greater spiritual experience than they can find in their original religion.
