the reason behind this is-

the starch present in the bread as we chew it. Due to the absence of starch in the chewed bread, the iodine test shows a negative result

Explanation:

It comes positive at first because it contains starch, after chewing it becomes negative because the saliva contains enzymes called salivary amylase which breaks down starch into simple sugars , like maltose and dextrin. When you chew the bread saliva digests the starch present in it hence it gives negative test.
