Bison was wanted in Europe and the east of the US: smoked bison tongue was delicious and the hides were used to make strong belts which were used for machines. Bisons were difficult to control so it was better to replace them with domestic cattle.
Early 1870 chemicals were invented by a German in order to tan bison skin in a very quick way. Prior that date white traders were depended on trade with the Plains Indians. They were tanning the skins with the brains of the Bison. This was mainly done by women and was quite an intensive work. That’s why natives were raiding other natives and white and Mexican settlements in order to find women to tan the skins.
