bcoz ,the medium (chilled environment) is not suitable for growth of bacteria
hot milk
when buttermilk is added to it ,curdling processes may occur or may not occur due to medium (hot condition).

when buttermilk is added to it ,growth of bacteria is fast and vigorous hence it forms curdling .
