Evaporation is a surface phenomenon, it generally occurs near the surface of liquid. The molecules present at the surface hit or collides with the molecules of air near the surface. Thus, they gain heat energy and in turn kinetic energy as they get become excited. This molecules of water after excitement vaporises and taking all the heat from the liquid causing the temperature of liquid to reduce. This is referred to as cooling. Thus Evaporation causes cooling.
