Boiling potatoes destroys its cell membrane and the cells in it becomes denatured and shapeless. Cell membrane also known as partially permeable membrane controls what enters and exits the cells.

In this case, the cell membrane is no more ready for osmosis and so boiled potato does not demonstrate osmosis.
