Fungi is widely used in different ways in food industry. The useful role of fungi with respect to given examples are as follows:
- Use of fungi in bakeries: Fungi is used in bakeries on a large scale for the preparation of different kinds of breads. Fungi such as bakers yeast ( also known as Saccharomyces cerevisiae) are single celled fungi which is used for the process of bread making and pizza base making in order to ferment it, make it spongy, soft and light.
- Use of fungi in cheese processing: Again fungi plays a very important role in cheese processing as it is involved in the production as the ripening mold. Adding of selected fungi in cheese improves the quality of cheese thereby enhancing the flavour as well as texture.
- Use of fungi in breweries: Fungi helps in the process of fermantation of sugar by zymase (an enzyme producing alcohol) which used for wine production.
