Hey mate , well cockroaches can actually stay afloat in water for a while , but once they sink , they cant breathe the oxygen dissolved and hence die.

The respiratory organs of cockroach are tracheae which open outside through small opening called spiracles. through these openings gaseous exchange occurs. when the cockroaches put in water, it spiracles get blocked and gaseous exchange does not take place. Hence, the Cockroach dies ultimately.
