compound X is sodium bicarbonate(NaHCO3) which is used to make pakoras crispy and also as an antacid.
CHEMICAL REACTION ON HEATING X-
NaHCO3---(on heating)--->Na2CO3+CO2+H2O. this reaction is used in preparing washing soda.

Here X represents the baking soda

It has the chemical formula:- NaHCo3

during cooking it gets converted into Na2Co3 with the release of H2O and CO2
