The colour of the tablet has got nothing to do with it's efficiency in treatment.

(there is also a lot of gray area in not looking like iron as the colour itself depends on various factors )

In RBC the iron is present in fe2+ ( ferrous ion) state whereas the iron bars or girders (we see in our daily life) is elemental form iron (uncharged).

The iron in our body or tablet we consume is the iron bound to organic and inorganic complexes.

Hence the iron tablet looks different from iron bar.
