Question

explain two ways by which food industries prevent rancidity.(b) write down the decomposition reaction in prespective of -(1)thermal (2)sunlight (3)electricity

solution

(a) 2 ways by which food industries prevent Rancidity-:

  • Adding antioxidant to food containing fat and oil. E.g butlylated hydroxy anisole is added to butter as antioxidant.

  • it can also be prevented by packaging fat and oil containing food in Nitrogen gas.

(b) Decomposition Reaction in presence of :-

(1) Thermal -

Calcium carbonate when heated gives quicklime (CaO) and carbon dioxide.

 \sf{CaCO_{3} (s) { \large{\to}} CaO(s)+ CaO_{2}(g)}

(2) sunglight-

white silver chloride turns grey in sunlight because silver metal is formed due to photolytic reaction and chlorine gases evolved.

 \sf{2AgCl (s)  { \large{\to}}2 Ag(s)+ Cl_{2}(g) }

(3) Electricity-:

Electrolysis of water gives Hydrogen and oxygen

 \sf{2HO_{2}{ \large { \to}} H_{2}+O_{2} }

More to know!!

✏️ CORROSION- its a process in which metals reacts with substance like moisture & gases present in atmosphere to form surface compounds.

✏️silver turns black due to formation of silver sulphide. copper turns green due to formation of copper carbonate. Iron reacts with oxygen & moisture to form rust.

✏️ RANCIDITY- is a process in which food material gets spoilt when it comes in contact with oxygen. It leads to the change in taste and smell of the food materials.
