When ethanol reacts with sodium, it leaves off hydrogen gas, and sodium ethoxide is formed in that process. Hence, hydrogen gas is evolved during this process. A balanced chemical equation of the reaction involved: 

2C2H5OH + 2Na ....... 2C2H5ONa + H2 


You can also use this equation to release hydrogen gas from ethanol and sodium reaction: 

CH3CH2OH + 2Na .......... CH3CH2ONa + H2
