1 NaHCO3 + CH3COOH gives CH3COONa + H20 + CO2

The brisk effervescence is due to liberation of carbon dioxide.

2 If the gas liberated is passed through a solution of lime water and lime water turns milky then we can conclude that gas liberated is C02.

When an acid reacts with sodium bicarbonate, the acidic aqueous sodium salt and carbon dioxide gas is produced.

The following is the reaction between sodium bicarbonate and acetic acid:  

NaHCO_{3} + CH_{3} COOH----- > CH_{3}COONa + H_{2} CO_{3}

Acetic acid and sodium bicarbonate combine to form aqueous sodium acetate and carbonic acid. Because carbonic acid is extremely unstable, it decomposes into water and carbon dioxide in the following way:

H_{2} CO_{3}----- > H_{2}O+ CO_{2}

This carbon dioxide gas is expelled from the test–tube and is visible as a rapid effervescence.

When you add a few drops of acetic acid to a test tube containing sodium bicarbonate powder, a colorless and odourless carbon dioxide gas is emitted with quick effervescence.
