everyone, however good, sometimes makes a mistake (or complains). The first element is often found as ...there is no one so good to not make mistakes.
So the quote is contradictory to the real world. As there is no possibility of the Italian quote to be true. It is just making a point clear that however good a horse and a wife may be they are bound to stumble and grumble respectively.
