Gall bladder stores extra bile that is secreted by liver in human body. In the absence of gall bladder, the bile gets wasted. Bile is responsible for breakdown of fatty foods ao that they can be digested easily. Fatty foods are heavy on stomach and breakdown very slowly. When gall bladder is absent, their breakdown becomes very difficult and causes bloating and heaviness on stomach and pressurises the liver.

Because Gall Bladder secretes Bile Juice which function is to emulsify fats into simpler substances so that food become easier to digest but if there is no gall bladder then there will not any bile juice and Fatty Foods will create many problems to digest :)
