To Alter a single ledger or a single product, go to the alter screen.

(Accounts Info - Ledger - Alter) for Ledgers

(The opening balance will be visible at screen bottom)

If you want to Zero the whole Ledgers or Stock,

(Accounts info - Alter(Multiple Ledger) - Select All Items - Alt+Z) for Ledgers.

And Inventory info - Stock Item - Alter (Multiple Item) - Select All Items - Alt+Z to zero the whole stock at once
