The powder the man added must contain yeast. Yeasts are the microorganisms capable of secreting such enzymes which converts simple carbohydrates like glucose into alcohol and produce carbon dioxide.

                        YEAST

C₆H₁₂O₆   -------------------------->  2 C₂H₅OH  +           2 CO₂

Glucose(aq)                                  Ethanol(aq)      Carbon dioxide

This is why Yeasts are used in large scale alcohol fermentation.
