Oil and fat containing food on reacting with oxygen in air , undergo rancidity I.e. start emitting foul smell and taste therefore the chips packet are flushed with a gas like nitrogen which doesn't cause rancidity. (2) we apply paint on iron objects to protect them from rusting so that they could last for a long time.
