Apple contains iron content

when kept in atmosphere iron reacts with moisture and oxygen to form rust which is brown in colour

It is because of large quantity of iron is present in the apple and when it comes in the contact with air it becoms brown.

like rusting of iron when iron comes in the contact of air (oxygen).
