the carbohydrate in it converts into starch and hence it tastes sweet

When you see a food item in front of you , and that too your favourite , your mouth gets watered automatically.

Do you know from where does this water come and what it is ?

This water is nothing but saliva , which is secreted by our salivary glands.
Saliva contains an enzyme called "salivary amylase".
This enzyme breaks down starch present in the foo item into simple sugars.

Hence , a when we chew a piece of chhapathi for a long time a sweet taste comes [ due to saliva ]
